This healthy chicken salad recipe stays at the top of my meal planning rotation for three reasons. One because it is packed with nutrition, second it’s a quick recipe, and third it’s easy to make.

When I need a healthy lunch this is my go to food, especially since I can prepare it ahead of time and I can eat it several days in a row. I buy organic produce and chicken for this dish, but it’s up to you if you want to buy organic.

In one fast meal I get protein, healthy fats, fiber, and carbohydrates. I also eat a full range of vitamins from natural sources including vitamin C, vitamin A, vitamin B6, vitamin B12, potassium, niacin, pantothenic acid, magnesium, manganese, riboflavin, vitamin K, copper, iron, calcium, phosphorus, selenium and zinc.

Kitchen Utensils

  • Large mixing bowl
  • Small mixing bowl
  • 1 Serving spoon or spatula
  • Sharp chopping knife
  • Cutting board

Recipe

  • 2 cups of roasted chicken (You can make it yourself or you can buy it ready made at your local store.)
  • 2 apples chopped
  • 2-4 stalks of organic celery diced (It depends on how much celery you like.)
  • 2-3 tablespoons of organic cilantro (Taste test before adding too much)
  • 1 lime juiced

Dressing

  • 2 tablespoons of mayonnaise
  • 1 teaspoon of dry mustard (Check your mayonnaise for the list of ingredients. Some already contain mustard so you might want to us 1/2 teaspoon.)
  • ¼ dry red pepper flakes or more if you like it spicy like me (optional)
  • ½ lemon zest
  • A pinch of salt and pepper to taste

Mix dressing ingredients in a small bowl. Next combine chicken, apples, celery and cilantro in a large bowl. Add dressing ingredients to the large bowl and stir. Lastly add the juice from one lime.
