Creamy Mushrooms and Spinach

A wonderfully hearty side dish that will make any dinner better. You can also add chicken or beef to this recipe and make it an entire meal.

Sun-dried tomatoes add a lovely flavor, but they remain your choice. For me, I would make this creamy mushroom recipe without the sun-dried tomatoes. I hate to admit it, but they give me heartburn so I stay away from them.

Mushrooms with spinach

Ingredients

  • 2 Tablespoons butter
  • 2 garlic cloves diced
  • 5-6 cups of half-sliced large white mushrooms
  • 1 small yellow onion chopped
  • 2 tablespoons sun-dried tomatoes in oil (optional)
  • 1 cup of heavy cream or half and half
  • Salt and pepper to taste
  • 3 cups of fresh baby spinach washed
  • ½ cup freshly grated Parmesan Cheese
  • 1 teaspoon of cornstarch and 1 tablespoon water mixed together
  • 1 teaspoon of dried oregano and basil (you can also use fresh herbs ½ teaspoon each)

Instructions

  1. Saute the onion in butter. When translucent and fragrant, add the garlic. You don’t want the garlic to burn.
  2. Add sun-dried tomatoes and cook for 2 minutes. It is important to add ingredients in steps to create the creamy mushrooms with spinach and sun-dried tomatoes dish.
  3. Next add mushrooms, cooking until they release their juices. This will probably take about 3 to 5 minutes. Stir the mushrooms to allow them to coat with the rest of the ingredients in the pan.
  4. Add the spinach. This may seem like a lot of spinach, but it will wilt down. When the spinach wilts reduce the heat to low. Add the cream and bring to a simmer. It is important to keep the heat low at this point so the cream does not separate.
  5. Once the creamy mushrooms with spinach and sun-dried tomatoes are mixed together and heated through, add the Parmesan Cheese. Taste to adjust flavors. Add the salt pepper and herbs. It is important to taste again before serving. You can adjust seasonings at this point.

Tips: If you do not have sun-dried tomatoes to add, you may leave them out.

You may also add more spinach, as spinach gives additional nutritional value and extra vitamins and minerals.
